Blackberry Basil Ricotta Pizza

Ingredients:

  • 1 pre-made pizza dough or your favorite homemade dough
  • 1 cup ricotta cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1 cup fresh blackberries
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Salt and pepper, to taste
  • Optional: balsamic glaze for drizzling

Directions:

  1. Preheat your oven to 475°F (245°C).
  2. If using a pizza stone, place it in the oven to preheat as well.
  3. Roll out the pizza dough on a lightly floured surface to your desired thickness.
  4. Transfer the dough to a pizza peel or an inverted baking sheet lined with parchment paper.
  5. Brush the dough lightly with olive oil.
  6. Season with a pinch of salt and pepper.
  7. Spread the ricotta cheese evenly over the dough, leaving a small border around the edges.

Busy Days Pizza Dough

Ingredients:

  • 3 cups Flour
  • 1 1/4 cups Warm Water (about 100-120 degrees)
  • 1 tablespoon Yeast
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 1 tablespoon Oil

​Instructions:​

  1. Heat water until warm and stir in yeast.
  2. Let sit and proof.
  3. Bubbles should form on the top.
  4. While the yeast is proofing, add the flour, sugar, and salt to a large bowl.
  5. Stir to combine.
  6. Add the oil and proofed yeast.
  7. Stir until the flour is all moistened.
  8. Gather the dough and transfer to a well-floured surface, it might be sticky at first.
  9. Knead the dough for 5 minutes, adding more flour as needed as you are kneading to keep it from sticking.
  10. The dough should be smooth and elastic after kneading and ready to use in any recipe calling for pizza dough.​

Pizza Rolls

Ingredients:

  • 1 package crescent roll dough
  • 32 slices pepperoni
  • 4 mozzarella string cheese
  • 2 tablespoons butter
  • 1 clove garlic
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon onion powder
  • Pizza sauce for dipping

Instructions:

  1. Preheat oven to 375 degrees.
  2. Line a baking sheet with parchment paper.
  3. Unroll the crescent dough and separate into 8 triangles.
  4. Place 4 slices of pepperoni along the wide part of the crescent dough.
  5. Place half of a string cheese in the center of the pepperoni and roll the dough up as you normally would.
  6. Repeat with remaining pieces of dough.
  7. Melt the butter in the microwave.
  8. Finely mince the garlic and stir into the butter along with the parsley and onion powder.
  9. Spoon over the crescent rolls.
  10. Bake for 8-10 minutes or until golden brown.

  • 3 1/2 cups all-purpose flour

  • 2 teaspoons salt

Directions:

  1. In a small bowl, dissolve yeast and sugar in warm water.
  2. Let stand until creamy, about 10 minutes.
  3. In a large bowl, combine flour, olive oil, salt, and the yeast mixture; stir well to combine.
  4. Knead until the dough has pulled together, about 5 minutes.

  • 2 Tbsp all-purpose flour
  • 1/2 tsp black pepper
  • 1/2 cup skim milk
  • 1/4 cup half and half
  • 1/4 cup Parmesan cheese
  • 1 1/2 cup boneless skinless chicken breast, cooked and shredded
  • 1/4 cup red onion, diced
  • 3/4 cup Mozzarella cheese
  • 1 tsp fresh thyme, chopped
  • 1/2 tsp dried oregano
  • 1 Tbsp fresh parsley, chopped

Directions:

  1. Preheat Oven:
    1. Preheat your oven to 450°F (232°C).
  2. Prepare a baking sheet with a silicone liner, or grease and sprinkle with cornmeal.
  3. Prepare Sauce:
    1. Melt butter in a small saucepan over medium heat.
    2. Sauté roasted garlic for 1 minute.
    3. Add flour and mix until well blended.
    4. Cook for 1 minute.
    5. Slowly whisk in milk and half and half, adding black pepper.
    6. Cook for about 3 minutes, or until the sauce starts to thicken.
    7. Remove from heat and stir in Parmesan cheese.
  4. Assemble Pizza:
    1. Spread the pizza dough into roughly a 12-inch circle on the prepared baking sheet.
