Ingredients:
4 slices of bread (any type you prefer)
4 large eggs
1/4 cup milk
Salt and pepper, to taste
1 tablespoon butter
1 cup shredded cheese (cheddar, mozzarella, or your favorite variety)
Instructions:
In a bowl, whisk together the eggs, milk, salt, and pepper until fully combined.
Heat a non-stick skillet over medium heat and melt the butter.
Pour the egg mixture into the skillet, gently stirring as it cooks until the eggs are scrambled to your preferred consistency. Remove from heat.
Preheat a separate skillet or griddle over medium heat.
Lay two slices of bread on a flat surface, and sprinkle a generous amount of shredded cheese on one side of each slice.
Spoon the scrambled eggs onto one of the bread slices, placing them on top of the cheese.
Top with the second slice of bread, cheese side down.
Place the sandwich on the preheated skillet or griddle and cook for 2-3 minutes on each side, or until the bread is golden brown and the cheese has melted.
Remove from the skillet and allow it to cool for a minute before slicing in half or serving whole.
Serve warm and enjoy the crispy, gooey, scrambled egg grilled cheese sandwich!

2 large slices crusty bread
2 teaspoons butter
1/2 avocado, sliced
2 slices cheddar cheese
1 tomato, sliced
1 egg
black pepper
Directions
Use a circular cookie cutter to cut a hole in one of the slices of bread.
If you don’t have a cookie cutter, just cut around the top of a drinking glass instead.
Butter both sides of the two slices of bread, and place in a frying pan.
Cook over a medium heat for a few minutes, until the underside is golden brown.
Turn the slices over.
Turn the heat down fairly low.
Top the whole slice of bread with sliced avocado, cheese and tomato, and crack the egg into the hole in the other slice of bread.
Cover the pan with a lid, and cook for a few more minutes, until the cheese has melted and the egg is cooked to your liking.
Sandwich together the two pieces of bread, top with a good pinch of black pepper, and serve
immediately.
