Fluffy Yogurt Cake

Ingredients:

  • 300 g of Greek yogurt (plain is also fine)
  • 4 egg yolks
  • 4 egg whites
  • 3 tablespoons of cornstarch
  • 6 tablespoons of maltitol or erythritol (or sugar)
  • 1 packet of vanilla sugar (optional)
  • 1 teaspoon of baking powder
  • A pinch of salt
  • Enough powdered sugar for dusting

Method:

  1. Prep:
    1. Preheat your oven to 180°C (356°F).
    2. Grease a cake pan and set aside.
  2. Mix Yogurt and Yolks:
    1. In a large bowl, combine 300 g of Greek yogurt with 4 egg yolks, mixing until smooth.
  3. Dry Ingredients:
    1. Add 3 tablespoons of cornstarch, 6 tablespoons of maltitol, erythritol, or sugar, and 1 packet of vanilla sugar (if using) to the yogurt mixture.
    2. Stir in 1 teaspoon of baking powder and a pinch of salt.
  4. Whip Egg Whites:
    1. In a separate bowl, beat the 4 egg whites until stiff peaks form.
  5. Fold:
    1. Gently fold the egg whites into the yogurt mixture, taking care not to deflate the mixture.
  6. Bake:
    1. Pour the batter into the prepared cake pan.
    2. Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool and Dust:
    1. Let the cake cool completely before dusting with powdered sugar.
  8. Serve and Enjoy:

Greek Yogurt Pancakes

Ingredients:

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup Greek yogurt
  • 1/4 cup milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • Butter or oil for the pan

Directions:

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, combine Greek yogurt, milk, eggs, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.

Fluffy Yogurt Cake

Ingredients

  • 50g flour
  • 20g corn starch
  • 300g yogurt
  • 2g salt
  • 30ml vegetable oil
  • 4 egg yolks
  • 1 teaspoon vanilla extract
  • 4 egg whites
  • 80g sugar
  • 1 teaspoon lemon juice

Preparation

  1. In a bowl, add the egg yolks, yogurt, salt, vanilla extract, flour, and cornstarch and mix everything until well combined.
  2. In another bowl, add the egg whites, sugar, and lemon and beat with a mixer until the egg whites are firm.
  3. In a bowl with the egg yolks, add the spatulas of the egg white mixture and mix well with a spatula.
  4. Add the egg yolk mixture to the rest of the egg white mixture and combine everything well.
  5. Add the mixture into the mold and turn it in a circle with a skewer stick.
  6. Gently tap the mold several times to remove any air bubbles.
  7. Add the mold to the baking sheet and pour hot water.
  8. Bake at 284°F/140°C for 60-70 minutes.

200g Tennis biscuits
60ml Butter
One large bag of Marshmallows (140g)
One 500g pot of Yogurt

Pre-heat the oven to 180°C.
Crush the biscuits and melt the butter.
Mix the biscuits and butter and squish into a tart tin.
Bake for 10 minutes and set to one side.
Place the marshmallows in a heat-proof bowl and microwave for 30 second blasts until
marshmallows are very well melted .
Use a BIG bowl as the marshmallows expand a lot. And make very sure they are properly
melted otherwise your tart won’t set as well and it will have marshmallow bits in it.
When the marshmallows are completely melted, scrape in the tub of yogurt and mix
thoroughly. If you realize that the marshmallows hadn’t completely melted after all, return
the whole mix to the microwave and heat in 15 second blasts, stirring in between, until just
melted. Be careful not to boil the yogurt, though.
Pour into the tart tin and place in the fridge for a couple of hours.

An interesting taste of yogurt and Condensed Milk that will have you coming back for more.
Its a simple easy to bake cheesecake.

Ingredients
1 Litre Yogurt
2 Tins Condensed Milk
Granadilla Pulp (Optional)
SO grams butter
Tennis Biscuits

Method
Melt butter and mix with crushed biscuits to form a base
Mix yogurt and condensed milk
Pour mixture into oven prove dish
Bake for 20 minutes at 180deg
Let it cool down
Spread pulp on top (optional)
