Anti-Inflammatory Turmeric Chicken Soup

Ingredients:
- 1 lb chicken breast or thighs, diced
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon fresh ginger, grated
- 1 teaspoon ground turmeric
- 4 cups chicken broth
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 cup kale or spinach, chopped
- Salt and pepper to taste
- Fresh parsley for garnish
Directions:
- Heat olive oil in a large pot over medium heat.
- Sauté onion, garlic, and ginger until fragrant.
- Add turmeric and stir for 30 seconds.
- Add chicken and cook until lightly browned.
- Pour in chicken broth, then add carrots and celery.
- Bring to a boil, then reduce heat and simmer 15-20 minutes until vegetables are tender.
- Stir in kale or spinach and cook 2-3 minutes until wilted.
- Season with salt and pepper, garnish with parsley, and serve warm.
