Cornstarch and Condensed Milk Cookies filled with Dulce de Leche

Ingredients:
- 50 cookie shells
- 100 g butter
- 1 egg yolk
- 1 lemon zest
- 30 g powdered sugar
- 150 g condensed milk
- 250 g cornstarch
- 80 g all-purpose flour
- 1/2 tsp baking powder
- 400 g dulce de leche
Preparation
- In a bowl, combine the butter, powdered sugar, egg yolk, and condensed milk until pale in color.
- Flavor with lemon zest.
- Sift and add the cornstarch, flour, and baking powder in two batches.
- The mixture will be somewhat sticky.
- Let it rest in the refrigerator for 1 hour on plastic wrap.
- Weigh out a 10 g portion and shape it into a sphere.
- Place on a baking sheet lined with parchment paper/silicone/nonstick sheet.
- Press lightly with a fork.
- Bake for 8 to 10 minutes at 350°F (170°C) or until the bottom is firm and lightly golden.
- Cool completely.
- Fill with dulce de leche to taste.
