- 2 egg whites
- 1 ½ pounds boneless skinless chicken breasts cut into bite-sized pieces

Lemon Sauce
- ¾ cup chicken broth low sodium
- ⅓ cup fresh lemon juice
- ¼ cup granulated sugar
- 2 tablespoons honey
- 1 tablespoon lemon zest
- 1 tablespoon soy sauce low sodium
- 2 tablespoons cornstarch
- 2 tablespoons water
- 1 teaspoon sesame oil

Instructions
- In a large skillet or wok, heat vegetable oil to 350°F (about 1 inch deep).

- Transfer to a paper towel-lined plate.
- For the sauce, combine chicken broth, lemon juice, sugar, honey, lemon zest, and soy sauce in a saucepan over medium heat.
- In a separate bowl, stir together cornstarch and water to make a slurry and set aside.
